Cestino di Parmigiano Reggiano con Prosciutto Citterio


  • 1 Package Citterio Fresco Prosciutto or Prosciutto di Parma
  • 1 Wedge Parmigiano-Reggiano Cheese (shredded)Crostini Asparagus Prosciutto
  • Bib Lettuce
  • 2 Avocados
  • Fresh Mozzarella Cheese - sliced
  • 1 small onion chopped
  • 2 Tomatoes
  • 1 Roasted Red Pepper (sliced)
  • 2 Shallots (thinly sliced)
  • 1 Lemon
  • 1 c. White Vinegar
  • 1/2 tsp. Salt (for Shallots)
  • 1 tsp. Sugar
  • Salt & Pepper
  • Olive Oil
  • Cilantro
  • Balsamic Vinegar


Cheese Cestino (basket):
Preheat oven to 350F. Cut parchment paper to cover cookie sheets.
Shred Cheese. Spoon cheese on parchment paper in 3" circles. Sprinkle with pepper.
Bake in oven for 4-6 minutes (you want the cheese to be slightly melted, but not liquid). Remove from heat and allow to cool 1-3 minutes. Take 3 cheese circles and shape into a basket shape - you can do this by hand or use a muffin pan or a bowl to help shape). Allow to form (if you want a more sturdy basket, place in refrigerator for 15 minutes).
You can prepare these 1 day in advance

Combine Vinegar, Salt, and sugar in a pan and bring to a simmer.
Simmer for 3 minutes while whisking until incorporated.
Remove from heat, pour into bowl.
Add shallots. Let sit 2-3 hours (minimum). Prepare no more than 2 days before serving (keep refrigerated).

Mash avocado in a large bowl.
Add chopped onion, chopped Cilantro (to taste) and 1 tsp Olive oil. Salt & Pepper to taste. Mix thoroughly. Squeeze the juice of 1 lemon on top to prevent the avocado from turning brown.

Prosciutto Crisps:
Preheat oven to 350F.
Remove slices of Prosciutto and place on sheets of foil.
Place in oven and bake for 8-12 minutes (until slightly crisp, but not brittle) - remove from heat and allow to cool on paper towels.

Place a few leaves of lettuce in the bottom of the cheese basket.
Scoop 1 large spoon of avocado mixture on top of the lettuce.
Place 1 slice of fresh mozzarella cheese on top of avocado
Place 1 sliced of tomato on top of cheese.
Top with some shallots, a slice of roasted red pepper and sprinkle with pepper.
Place a Prosciutto crisp in the side of the basket.
Drizzle with Balsamic Olive Oil.
